Black Bean Garlic Chicken Salad

Directions:

In a small mixing bowl, combine olive oil, cornstarch and Black Bean Garlic Sauce (black bean garlic dressing). Set aside. 
Heat oil in pan. Fry chicken until golden brown. Keep at room temperature.
Place salad on plate and drizzle black bean garlic sauce dressing on top with cooked sliced chicken

Directions:

Cook rice vermicelli in boiling water according to packet instructions or until tender. Drain and put on a serving plate. 
Add all ingredients and seasoning mix to rice vermicelli. Mix well and serve hot.

Boil and shred chicken breast. Rinse and drain bean sprouts. Wisk together dressing ingredients.
In a bowl, combine all ingredients. Serve with chopped roasted peanuts.
