Directions:

In a bowl beat 2 soup spoonfuls of concentrated sugar free milk, a large spoonful of tarragon mustard, then incorporate some oil, all whilst whisking.
At the end add a drop of vinegar.

Béarnaise Sauce

Ingredients:

Directions:

In a casserole, cook the Reims vinegar, the pepper, the shallots and the tarragon until you obtain the volume of a soup spoonful of liquid.
Strain and add a soup spoonful of cold water.
Incorporate the egg yolks and whisk vigorously.
Continue to whisk over a low heat for 4 minutes.
Away from the heat add the melted butter little by little, until the sauce thickens and becomes a continual trickle.
Add the chives and serve.

Farmhouse style sauce for fish fillets

Ingredients:

Directions:

Peel and finely chop the shallots.
Put them into a thick-bottomed casserole along with the vinegar and a third of a glass of water. 
Allow to cook for 20 minutes. The liquid should have evaporated and the shallots reduced to purée. Amway from the heat, add the butter and the fresh cream to thicken the sauce. Allow to cool down.
Incorporate the 2 yoghurts while whisking. Salt and pepper.
Add the sauce to a fish fillet.

Italian sauce

Ingredients:

Directions:

Slice the leek and cook over a low heat in the butter.
Drain and crush the tomatoes and put them in a casserole. Add the cream, the tomato mustard, the garlic, the oregano, the lemon juice and the salt and pepper.
Mix well and allow to cook for a few minutes. This sauce is perfect for seasoning all types of pork and veal dishes, as well as pasta.

Melt the butter in a pan without allowing it to bubble.
Add the cream and allow to simmer until the sauce thickens.
Add the mustard. Season.

Tomato sauce with Balsamic vinegar

Ingredients:

Directions:

Place, in a casserole, the oil, the peeled tomatoes (unseeded and crushed with a fork), the sage and the salt.
Cook for about 10 minutes.
Then, away from the heat, remove the sage leaves and add the Balsamic vinegar.
Mix together.
Pour over pasta, add the butter and the grated Parmesan.
