Boiled Tofu in Sugar Syrup

Ingredients:

Directions:

Soak and soften the freeze dried tofu in water. Cut in half vertically, then into 4 equal size pieces. Peel the carrot, cut into small, thin pieces. (1) 
Add both (A) and (1) to a pot. Once boiling, lower the heat and simmer until the carrots soften. (2)
Arrange (2) on a plate. Garnish with well-cooked peas.

Diced Vegetable & Tofu Salad

Ingredients:

Directions:

Divide the tofu into 12 equal cubes. (1)
Chop the tomatoes, cucumbers, Chinese yam and daikon radish into 4 mm (0.2 in) cubes. Do the same for the perilla leaf and mix all together. (2)
Arrange the tofu cubes on a dish, place (2) on top and dress with ponzu.

Fried Tofu in Vinegar & Soy Sauce

Ingredients:

Drain the tofu and cut into 3-4 cm (1-1.5 in) cubes. (1)
Soften the spring onion and ginger in water. Parboil the mushrooms then remove and finely chop. Mix (A) and season the ingredients.(2)
Heat the cooking oil, cover the tofu in starch and fry until slightly crispy. (3)
Remove excess oil with paper towels, and while still hot place in (2), mix well, and serve.

Japanese-style Hamburger Steak

Ingredients:

Directions:

Soak freeze-dried tofu in warm water until softened. Wrap tofu with cloth and break into small pieces. Chop onion finely, stir-fry with 1/2 tbsp cooking oil and then cool. Coarsely chop lotus root and soak in vinegar mixed with water (not included in quantities above).
Put minced beef and pork, tofu and (A) in a bowl, and mix well. Add onion, lotus root, egg and flour, and stir well to form a sticky paste. Divide the paste in half and make two oval patties. Heat 1 tbsp cooking oil in a frying pan and fry the patties.
Remove tough stems of enoki mushrooms and cut mushrooms in half. Remove stems of shiitake mushrooms and cut mushrooms into thin strips. Put 2/3 cup water, (B), enoki and shiitake mushrooms in a pan. Dissolve potato starch in water and add to mixture when it boils to make a thick sauce.

Kuzushi Tofu

Ingredients:

Directions:

Break apart the tofu into edible size pieces by hand and place in a small bowl.
Place small pieces of the onion, shaved ginger, the perilla and the katsuobushi on top of the tofu.
Season with regular or plum soy sauce.

Potherb Mustard & Fried Tofu Salad

Ingredients:

 

Directions:

After removing the roots from the mizuna, cut into 3 cm (1 in) long pieces. Soak in ice water for a short while, drain and dry. (1)
Douse the aburaage in hot water to remove some of the oil. Roast in a fry pan without oil. Remove, cut into 3 cm (1 in) widths, then into thin strips. (2)
Roast the chirimenjako in the fry pan (no oil). (3)
Mix together (A) forming the dressing. (4)
Arrange (1) - (3) on a plate and season with the dressing

Tofu & Avocado Spring Rolls

Ingredients:

Directions:

Drain and dry the tofu by wrapping it in paper towels. Divide into 4 long sticks. (1)
Remove the pit and skin from the avocado and cut into 4 sticks. (2) 
Mix the oyster sauce with onions. (3) 
Flatten out the spring roll skins and wrap (1), (2) and (3). Seal the edges with liquid starch. (4) 
Pour a decent amount of salad oil in a pan and evenly fry (4). Remove, cut into edible size pieces and garnish with ketchup.

Tofu & Honeywort in Sesame Dressing

Ingredients:

Directions:

Lightly dry the tofu with paper towels, cut into 4 equal pieces. Place on a plate and cool in a refrigerator.
Cut the honeywort stems into (1 cm) 1/2 in lengths. Open and flatten each piece by hand.
Evenly place each leaf on the tofu pieces, mix the dressing from (A) and pour on.

Tofu Steak in Garlic Sauce

Ingredients:

Directions:

Wrap the tofu in a paper towel. Place a small plate on top and set aside for 5 minutes, allowing the tofu to drain. Remove and cut into 3-4 cm (1.5 in.) cubes. Mix (A) and set aside.
Warm the salad and sesame oils over medium heat and fry the tofu cubes. Once both sides have begun to brown, add in the garlic and mix together well. Pour in (A) and simmer until the juice has disappeared. Turn off the heat, tear apart the leaves from the radish sprouts and sprinkle on top. Serve on a plate.

Tofu Steak with Shredded Plums

Ingredients:

Directions:

Drain tofu and wrap in paper towels. Leave for 10-15 minutes. (1)
Cut the myoga ginger in half, then slice thinly.(2)
Cut the spring onion in half, then into long, thin strips. Slice the green perilla into long, thin strips as well.(3)
Soak both (2) and (3) in water then drain.(4)
Remove the large pit from the dried plum and mash. Mix well with (A). Pour in a small pot, boil, remove and cool.(5)
Divide the tofu into 8 equal pieces. Lightly cover in starch.(6)
Heat salad oil in a pan, fry both sides of (6) until golden brown.(7)
Arrange (7) on a plate. Place (4) on top and dress with (5)

Yam Tofu

Ingredients:

Directions:

Cut the tofu in half, wrap in paper towels and microwave for 30 seconds. (1)
Peel and finely grate the yam.(2)
Place (1) in a bowl and mash.(3)
Add (2) to (3), mix together well and season with tsuyu.(4)
Serve all in a bowl and sprinkle on the green seaweed.
